Bamboo-tube cooked rice, zhu2 tong3 fan4 (竹筒饭in Chinese), also called sweet bamboo rice, xiang1 zhu2 fan4 (香竹饭in Chinese), is a special local Chinese food popular among ethnic nationalities in Yunnan Province and Guangxi Autonomous Region. Bamboo-tube cooked rice is usually cooked outdoors in mountains or cooked indoors on the charcoal. The cooking material is rice and meat, usually the sticky rice. Firstly, choose a piece of new bamboo with a length of 25 centimeters and about 6-cetimeter diameter. Make sure the bamboo is fresh not than 2 years. Then take a plenty of rice, which should be the sticky rice, and then soak the rice into water for more than 12 hours. Remember to stir the rice every now and then during it is soaked. The next step is to choose some burdening according to your personal tastes, for instance, sausage, bacon, and pickle and so on. To cook the dish quickly, you can mince the meat beforehand. Then put the soaked rice and seasoning into a piece of fresh bamboo tube, and use two banana peels to lock the cooking material from getting out the tube. Now you can bake the bamboo tube for 15 minutes on the big fire, for 5 minutes on the moderate fire and 3 minutes on the soft fire.
