Chinese Yam in Hot Toffee, ba2 si1 shan1 yao4 (拔丝山药in Chinese) is a traditional Beijing dish with at least 100-year history. The cooking material of the dish consists of Chinese yam, rock sugar, fried white sesame seeds and peanut oil. Yam is food, also one of Chinese traditional medicine, is rich in nourishing treasures of human body. It contains starch, protein, minerals, Vitamin.
