The Chinese Hamburger, rou4 jia2 mo2 (肉夹馍in Chinese) is a popular special snack in northwest China. It mainly has tow flavors, namely, Shaanxi Provinces Lazhi Rou Jiamo, which is made with pork in gravy, and Ningxia Hui Autonomous Regions Yangrou Rou Jiamo, which is made with lamb. As the name indicated, Lazhi Rou Jiamo is made of two basic elements, namely, the gravy-ed meat, la4 zhi1 rou4, 腊汁肉 and mo2, , a flat bread on which its served. But historically, the snack didnt always go by this name. It is said that the snack had ever been called hanrou (Han States pork) in the Warring States Period (475 B.C.-221 B.C.). The Han State, a triangular area encompassing the present-day Shaanxi Province, Shanxi Province and Henan Province, was the hometown of the famous Lazhirou. Later, the Han State was conquered by the Qin State, and the cooking technique was introduced into the capital of the Qin State, Changan (now known as Xian).
